This tea can be found in most Chinese restaurants' menu, where the spelling "Shui Hsien / Shui Shin" is more commonly used. Our Shui Xian originates from the high mountains of Wu Yi Shan, a region that has become a synonym of high quality Oolong teas.
Oolong teas from Mount Wu Yi are also referred as Yan Cha or "Rock Tea" due to the rocky terrain where the tea plants grow. Shui Xian from Wu Yi Shan is also said to have higher minerals contents compared to those grown in southern Fujian and Guangdong.
